- 2-3 lb. Beef roast
- 8 oz. can tomato sauce
- 2 clove garlic minced
- ¼ tsp. ground cumin
- 2 tsp. chipotle chili in adobo sauce
- 4 oz. can chopped green chilies
- 12-16 corn tortillas for serving
- 1 head lettuce shredded, for serving
- 16 oz. jar salsa for serving
- 1-2 cup cheddar shredded, for serving
Place the roast in the bottom of the slow cooker.
Mix together the tomato sauce, garlic, cumin and adobo sauce – pour over.
Pour the chopped green chilies over.
Cook on low for 7-9 hours or on high for 5-6 hours.
Shred beef and serve in corn tortillas topped with lettuce, salsa, and cheese.
