Easy Slow Cooker Shredded Beef Tacos

Ingredients

  • 2-3 lb. Beef roast
  • 8 oz. can tomato sauce
  • 2 clove garlic minced
  • ¼ tsp. ground cumin
  • 2 tsp. chipotle chili in adobo sauce
  • 4 oz. can chopped green chilies
  • 12-16 corn tortillas for serving
  • 1 head lettuce shredded, for serving
  • 16 oz. jar salsa for serving
  • 1-2 cup cheddar shredded, for serving

Instructions

  • Place the roast in the bottom of the slow cooker.
  • Mix together the tomato sauce, garlic, cumin and adobo sauce – pour over.
  • Pour the chopped green chilies over.
  • Cook on low for 7-9 hours or on high for 5-6 hours.
  • Shred beef and serve in corn tortillas topped with lettuce, salsa, and cheese.
