Egg Bake with Asparagus and Swiss Cheese

Ingredients

  • 16 eggs
  • cup fat-free half and half
  • 1 tsp. salt
  • ½ tsp. pepper
  • 2 cup Swiss cheese shredded
  • 2 cup asparagus diced & cooked

Instructions

  • Spray a 9x13 pan with nonstick spray.
  • Spread cooked asparagus and shredded Swiss over the bottom of the pan.
  • Whisk together eggs, half and half, salt and pepper until well combined.
  • Pour into baking pan and bake at 350° for 30-35 minutes, until set.

Notes

Notes: Using frozen, steam-in-the-bag asparagus spears cuts down prep time significantly! This can be made ahead and reheated in the microwave. To freeze, wrap serving-size pieces in plastic wrap and place in a ziplock bag. Thaw in refrigerator overnight.
