Egg Bake with Tomato and Mozzarella

Ingredients

  • 1 cup mozzarella shredded
  • 1 cup grape tomatoes cut in half
  • 8 eggs
  • ¾ cup fat-free half and half
  • ½ tsp. salt
  • ¼ tsp. pepper

Instructions

  • Spray a 9 x 13 baking pan with nonstick spray.
  • Spread tomatoes and mozzarella over the bottom of the pan.
  • Whisk together eggs, half and half, salt and pepper until well combined.
  • Pour into baking pan and bake at 350° for 30-35 minutes, until set.

Notes

Notes: This can be made ahead and reheated in the microwave. To freeze, wrap serving-size pieces in plastic wrap and place in a ziplock bag. Thaw in refrigerator overnight.
