Slow Cooker Gyro Lettuce Wraps

Ingredients

For the gyro lettuce wraps:

  • ½ cup olive oil
  • ¼ cup lemon juice
  • 3 cloves garlic crushed
  • tsp. dried mint
  • tsp. oregano
  • 1 tsp. black pepper
  • ½ tsp. salt
  • 2 lbs. chicken breast cut in strips
  • 1 head bibb lettuce leaves

For the cucumber sauce:

  • 1 cucumber diced
  • 8 oz. plain Greek yogurt or sour cream
  • ¼ tsp. dried mint

Instructions

For the cucumber sauce:

  • Stir cucumber, yogurt and mint together.

For the gyro lettuce wraps:

  • Mix oil, lemon juice, garlic, mint, oregano, salt, and pepper together in a small bowl and whisk to combine.
  • Place chicken in slow cooker.
  • Pour dressing over the top and stir to combine.
  • Cook on high for 5-6 hours or low for 7-8 hours.
  • Serve meat in lettuce leaves, topped with cucumber sauce.
