Italian Sausage and Bean Soup

- 1-1½ lbs. Italian sausage links casing removed or bulk sausage
- 1 large onion chopped
- 2 cloves garlic minced
- 2 15 oz. cans butter beans undrained
- 2 15 oz. cans black beans rinsed and drained
- 2 15 oz. cans diced tomatoes or fire-roasted tomatoes undrained
- 4 cups beef broth
- 2 tsp. dried basil
- ½ cup Parmesan shredded for topping each bowl
In a large pot, cook the sausage, garlic and onion until done.
Drain and rinse under very hot water to remove the extra fat.
Add all the other ingredients except the cheese and simmer for 10 minutes.
Serve in bowls and top with Parmesan cheese.
