Slow Cooker Italian Sausage and Bean Soup

- ½-¾ lbs. Italian sausage links casing removed or bulk sausage
- 1 small onion chopped
- 1 clove garlic minced
- 15 oz. can butter beans undrained
- 15 oz. can black beans rinsed and drained
- 15 oz. can diced tomatoes or fire-roasted tomatoes undrained
- 2 cups beef broth
- 1 tsp. dried basil
- ¼ cup Parmesan shredded for topping each bowl
In a skillet, brown the sausage, garlic and onion until the sausage is cooked through.
Drain and rinse under very hot water to remove the extra fat.
Place in the slow cooker crock.
Add remaining ingredients to the slow cook and cook on low for 4-6 hours or on high for 2-3 hours.
Serve in bowls and top with Parmesan cheese.
