Instant Pot Lentil Tacos

Ingredients

  • 1 cup lentils
  • 2 Tbs. olive oil
  • 1 onion diced
  • 1 clove garlic minced
  • 1 Tbs. chili powder
  • 2 tsp. cumin
  • 1 tsp. oregano
  • cups chicken broth
  • 1 cup salsa or use homemade recipe*
  • 12-16 taco shells
  • 1 small head lettuce shredded, optional for serving
  • 2 tomatoes diced, optional for serving
  • 2 avocados diced, optional for serving
  • ½-1 cup cheese optional for serving
  • ½ cup sour cream optional for serving

Instructions

For the tacos:

  • Rinse the lentils and drain them.
  • Hit the saute button and add the onion and garlic to the pressure cooker. Cook until onion softens.
  • Add the lentils and spices, cook for a minute.
  • Add the broth and set the manual cook time for 15 minutes.
  • Do a quick pressure release.
  • Stir in the salsa.
  • If you want to thicken it more, you can hit the saute button and cook for a few more minutes.
