- 1 cup lentils
- 2 Tbs. olive oil
- 1 onion diced
- 1 clove garlic minced
- 1 Tbs. chili powder
- 2 tsp. cumin
- 1 tsp. oregano
- 2½ cups chicken broth
- 1 cup salsa or use homemade recipe*
- 12-16 taco shells
- 1 small head lettuce shredded, optional for serving
- 2 tomatoes diced, optional for serving
- 2 avocados diced, optional for serving
- ½-1 cup cheese optional for serving
- ½ cup sour cream optional for serving
For the tacos:
Rinse the lentils and drain them.
Hit the saute button and add the onion and garlic to the pressure cooker. Cook until onion softens.
Add the lentils and spices, cook for a minute.
Add the broth and set the manual cook time for 15 minutes.
Do a quick pressure release.
Stir in the salsa.
If you want to thicken it more, you can hit the saute button and cook for a few more minutes.
