Quick White Chicken Chili

Ingredients

  • 1-1½ lbs. bone-in chicken pieces
  • 1 small onion chopped
  • 2 cloves garlic crushed
  • 4 oz. can chopped green chilies
  • ½ lb. great northern beans soaked, or 1½ cans
  • 1 tsp. cumin
  • ½ tsp. oregano
  • 1 dash cayenne pepper
  • ¼-½ tsp. chili powder
  • 2 cups chicken broth
  • 1 cup water
  • salt to taste
  • 1 Tbs. cornmeal
  • ½ cup milk

Instructions

  • In a large soup pot, cook the onion and garlic in olive oil.
  • Drain ½ can of beans. Add all the beans to the pot (one with its liquid).
  • Stir in the chopped green chilis, seasonings, chicken broth and chicken.
  • Heat over medium heat until hot through.
  • Stir milk and cornmeal together and add to the soup.
  • Adjust salt and pepper as needed, heat a few more minutes and serve.
