Quick White Chicken Chili

- 1-1½ lbs. bone-in chicken pieces
- 1 small onion chopped
- 2 cloves garlic crushed
- 4 oz. can chopped green chilies
- ½ lb. great northern beans soaked, or 1½ cans
- 1 tsp. cumin
- ½ tsp. oregano
- 1 dash cayenne pepper
- ¼-½ tsp. chili powder
- 2 cups chicken broth
- 1 cup water
- salt to taste
- 1 Tbs. cornmeal
- ½ cup milk
In a large soup pot, cook the onion and garlic in olive oil.
Drain ½ can of beans. Add all the beans to the pot (one with its liquid).
Stir in the chopped green chilis, seasonings, chicken broth and chicken.
Heat over medium heat until hot through.
Stir milk and cornmeal together and add to the soup.
Adjust salt and pepper as needed, heat a few more minutes and serve.
