Tomato Basil Chicken Soup

- ½ small red or yellow onion diced
- 2 cloves garlic crushed
- ½ Tbs. olive oil
- 15 oz. crushed tomatoes
- 15 oz. can petite diced tomatoes
- 2 cups chicken broth
- 2 Tbs. fresh basil chopped
- 1 dash ground red pepper
- ¼ cup parmesan shredded
- ¼ cup half & half
- 1-1½ cups chicken cooked, chopped
Cook onion and garlic in olive oil in a large pan.
Add crushed and diced tomatoes, chicken broth, basil, ground red pepper, and Parmesan.
Use an immersion blender to smooth soup, if desired.
Add half & half and chicken.
Heat over medium heat being careful not to bring to a boil.
