Ingredients

  • 2 heads romaine lettuce chopped
  • 8 oz. fresh mozzarella pearls or grated mozzarella
  • 1 pint cherry tomatoes halved
  • 2 avocados chopped
  • ½ red onion chopped
  • 2 cucumbers peeled and chopped
  • ¾ lb. chicken breast grilled and chopped, optional
  • 2 Tbs. Italian seasoning
  • 6 Tbs. olive oil
  • 2 Tbs. red wine vinegar

Instructions

  • Whisk the Italian seasoning, olive oil, and red wine vinegar together for the dressing.
  • In a large bowl, toss together the romaine, mozzarella, tomatoes, avocados, onion, and cucumbers.
  • Top with chicken, if using, and dressing to taste.
