Ingredients

  • 1 head romaine lettuce chopped
  • 4 oz. fresh mozzarella pearls or grated mozzarella
  • ½ pint cherry tomatoes halved
  • 1 avocado chopped
  • ¼ red onion chopped
  • 1 cucumber peeled and chopped
  • lb. chicken breast grilled and chopped, optional
  • 1 Tbs. Italian seasoning
  • 3 Tbs. olive oil
  • 1 Tbs. red wine vinegar

Instructions

  • Whisk the Italian seasoning, olive oil, and red wine vinegar together for the dressing.
  • In a large bowl, toss together the romaine, mozzarella, tomatoes, avocado, onion, and cucumbers.
  • Top with chicken, if using, and dressing to taste.
