- 1 head romaine lettuce chopped
- 4 oz. fresh mozzarella pearls or grated mozzarella
- ½ pint cherry tomatoes halved
- 1 avocado chopped
- ¼ red onion chopped
- 1 cucumber peeled and chopped
- ⅓ lb. chicken breast grilled and chopped, optional
- 1 Tbs. Italian seasoning
- 3 Tbs. olive oil
- 1 Tbs. red wine vinegar
Whisk the Italian seasoning, olive oil, and red wine vinegar together for the dressing.
In a large bowl, toss together the romaine, mozzarella, tomatoes, avocado, onion, and cucumbers.
Top with chicken, if using, and dressing to taste.
