Italian Herb Roasted Chicken

Ingredients

  • 1 small whole chicken
  • 1 clove garlic
  • 1-1½ Tbs. olive oil
  • 2 tsp. kosher salt
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 tsp. thyme
  • 1 generous grind of fresh black pepper

Instructions

  • Rinse the chicken, pat dry, and place in a shallow dish.
  • Cut garlic clove in half and rub all over the chicken.
  • Drizzle chicken with olive oil and use your hands to thoroughly coat the chicken with the oil.
  • Mix salt, herbs and pepper together and sprinkle on the chicken.
  • Bake at 350° uncovered for about 1½ hours or until chicken is cooked through.
