Napa Cabbage Salad

Ingredients

For the salad:

  • 1 small head Napa cabbage chopped
  • 1 carrot cut in short, thin sticks
  • 1 small honeycrisp apple diced

For the dressing:

  • 2 Tbs. olive oil
  • 2 Tbs. apple cider vinegar
  • ½ Tbs. maple syrup
  • ¼ tsp. Fennel seed
  • salt & pepper to taste

Instructions

  • Toss salad ingredients together in a large bowl.
  • Combine dressing ingredients in a container with a tight-fitting lid.
  • Shake well to mix the dressing. Pour dressing over salad and toss together.

Notes

This salad holds up well in the fridge for a few days.
