  • 4 sweet potatoes peeled and chopped into bite-sized pieces
  • 2 Tbs. olive oil
  • salt & pepper

Instructions

  • Toss sweet potatoes with a drizzle of olive oil, season with salt and pepper, and spread out on a baking sheet.
  • Roast at 400° for 20 minutes, until soft.
