Ingredients

For the salad:

  • 2 bags baby spinach
  • 2 cups shaved brussels sprouts
  • 3-4 clementines peeled and segmented
  • ¾ cup pomegranate arils
  • 2 shallots thinly sliced
  • ¾ lb. chicken breast grilled and diced, optional

For the dressing:

  • ¼ cup olive oil
  • 2 tsp. orange zest
  • 2 Tbs. orange juice
  • 2 tsp. white wine vinegar
  • salt to taste

Instructions

For the salad:

  • Toss together spinach, shaved brussels sprouts, clementines, pomegranates, and shallots.
  • Top with chicken, if using.

For the dressing:

  • Whisk ingredients together.
  • Dress salad to taste.
