- 3-4 clementines peeled and segmented
- ¾ cup pomegranate arils
- 2 shallots thinly sliced
- ¾ lb. chicken breast grilled and diced, optional
For the dressing:
- ¼ cup olive oil
- 2 tsp. orange zest
- 2 Tbs. orange juice
- 2 tsp. white wine vinegar
- salt to taste
For the salad:
Toss together spinach, shaved brussels sprouts, clementines, pomegranates, and shallots.
Top with chicken, if using.
