Ingredients

  • 1½-2 ripe tomatoes
  • 12 oz. artichoke hearts not marinated
  • ¼ cup oil
  • 1 Tbs. white wine vinegar
  • 1 small clove garlic pressed or minced
  • ½-1 Tbs. fresh herbs like basil or tarrogon or ¼ tsp. dried herbs
  • salt & pepper

Instructions

  • Cut the tomatoes and artichoke hearts into large bite-size pieces.
  • Mix the other ingredients and toss with the veggies. Enjoy!
