Ingredients

  • 1 cup frozen corn thawed
  • ½ red bell pepper diced
  • ¼ cup red onion diced
  • ½ jalapeno pepper seeds removed, diced
  • ¼ cup cilantro chopped
  • 2 Tbs. lemon or lime juice
  • salt & pepper to taste

Instructions

  • Combine all ingredients in a bowl and serve.
  • Note: Any leftovers hold up well in the fridge.
