Fully Loaded Burgers

- 15 oz. can black beans drained and rinsed
- 1 medium sweet potato cooked
- 1 cup brown rice cooked
- 1 cup old fashioned oats
- 2 cloves garlic crushed
- 1 Tbs. balsamic vinegar
- 1 tsp. chili powder
- ½ tsp. smoked paprika
- 2 cups baby spinach or baby kale finely chopped
- 6-8 whole wheat sandwich buns
- 6-8 slices tomato optional for serving
- 6-8 leaves lettuce optional for serving
- 6-8 onion sliced, optional for serving
Put the beans in a large bowl and smash them with a fork until most are smashed but there are still some left whole.
Scoop out the sweet potato from it’s skin and add it to the bowl.
Add the remaining ingredients.
Smoosh it all together with your hands and then form 6-8 patties.
Place the patties on a parchment lined baking sheet and bake at 400° for 30 minutes.
Serve on buns with your choice of toppings.
Note: Remaining beans can be frozen for future use.
Prep-Ahead Note: The sweet potato can be cooked ahead of time. I use the microwave for this. The rice can also be cooked ahead of time. If you want to form the burgers ahead of time and wait to cook them, that works too.
Freezer Note: These burgers freeze great! Cool them and then freeze in a single layer. Microwave 45 seconds on each side to reheat.
