15-Minute Curried Chickpeas

Ingredients

  • 1 Tbs. olive oil or skip oil and use a bit of water
  • 1 onion chopped
  • 1 garlic clove crushed
  • 2 15 oz. cans chickpeas drained and rinsed
  • 15 oz. diced tomatoes with juice
  • 15 oz. diced tomatoes with green chilis drained
  • 2 Tbs. curry powder
  • 10 oz. can coconut milk
  • salt to taste

Instructions

  • In a large skillet, heat the oil over medium heat
  • Add the onion and garlic and cook for about 5 minutes until the onion is soft.
  • Stir in the chickpeas, tomatoes, curry powder and coconut milk.
  • Season with salt and cook 5-10 more minutes until heated through.
  • Serve over brown rice or quinoa.
