- 1 Tbs. olive oil or skip oil and use a bit of water
- 1 onion chopped
- 1 garlic clove crushed
- 2 15 oz. cans chickpeas drained and rinsed
- 15 oz. diced tomatoes with juice
- 15 oz. diced tomatoes with green chilis drained
- 2 Tbs. curry powder
- 10 oz. can coconut milk
- salt to taste
In a large skillet, heat the oil over medium heat
Add the onion and garlic and cook for about 5 minutes until the onion is soft.
Stir in the chickpeas, tomatoes, curry powder and coconut milk.
Season with salt and cook 5-10 more minutes until heated through.
Serve over brown rice or quinoa.
