15-Minute Curried Chickpeas

Ingredients

  • tsp. olive oil or skip oil and use a bit of water
  • 1 small onion chopped
  • 1 clove garlic crushed
  • 15 oz. chickpeas drained and rinsed
  • 15 oz. can diced tomatoes with green chilies drained
  • 1 Tbs. curry powder
  • ½ 10 oz. can coconut milk
  • salt to taste

Instructions

  • In a large skillet, heat the oil over medium heat.
  • Add the onion and garlic and cook for about 5 minutes until the onion is soft.
  • Stir in the chickpeas, tomatoes, curry powder and coconut milk.
  • Season with salt and cook 5-10 more minutes until heated through.
  • Serve over brown rice or quinoa.
