15-Minute Curried Chickpeas

- 1½ tsp. olive oil or skip oil and use a bit of water
- 1 small onion chopped
- 1 clove garlic crushed
- 15 oz. chickpeas drained and rinsed
- 15 oz. can diced tomatoes with green chilies drained
- 1 Tbs. curry powder
- ½ 10 oz. can coconut milk
- salt to taste
In a large skillet, heat the oil over medium heat.
Add the onion and garlic and cook for about 5 minutes until the onion is soft.
Stir in the chickpeas, tomatoes, curry powder and coconut milk.
Season with salt and cook 5-10 more minutes until heated through.
Serve over brown rice or quinoa.
