Chicken Quesadilla

Ingredients

  • 2-3 cups chicken chopped or shredded
  • 15 oz. can fire-roasted or regular diced tomatoes drained
  • 15 oz. can diced tomatoes with green chilies drained
  • 2 cups corn frozen, thawed and pat dry
  • 3 cups cheddar or mexican blend cheese shredded
  • 8-10 large flour tortillas or 16-20 small tortillas

Instructions

  • Stir all ingredients together, except the tortillas.
  • Spray a skillet or griddle with cooking spray.
  • Place a tortilla on a flat surface.
  • Spread the chicken filling over it.
  • Top with another tortilla.
  • Place this on the hot griddle or skillet.
  • Cook until browned, then flip to brown the other side.
  • Cut into triangles and serve with salsa, sour cream, guacamole or whatever fixings you like and have on hand.
