Chicken Quesadilla

- 1-1½ cups chicken chopped or shredded
- 15 oz. can fire-roasted regular diced tomatoes or diced tomatoes with green chilies, drained
- 1 cup corn frozen, thawed and pat dry
- 1½ cups cheddar or mexican blend cheese shredded
- 4-5 large flour tortillas or 8-10 small tortillas
Stir all ingredients together, except the tortillas.
Spray a skillet or griddle with cooking spray.
Place a tortilla on a flat surface.
Spread the chicken filling over it.
Top with another tortilla.
Place this on the hot griddle or skillet.
Cook until browned, then flip to brown the other side.
Cut into triangles and serve with salsa, sour cream, guacamole or whatever fixings you like and have on hand.
