Smoky Backyard Burgers

Ingredients

  • 1 medium sweet potato
  • 15 oz. can chickpeas drained and rinsed
  • 1 cup cooked brown rice
  • 1 cup old fashioned oats
  • 2 cloves garlic crushed
  • 1 Tbs. balsamic vinegar
  • 2 Tbs. BBQ sauce no high fructose corn syrup
  • 1 tsp. smoked paprika
  • 2 cups finely chopped greens kale, spinach or chard, etc.
  • ½ tsp. liquid smoke optional
  • 6 whole-wheat buns

Instructions

  • Cook the sweet potato any way you like. I microwave it for about 8 minutes.
  • Pour the chickpeas into a large bowl and mash them until there are only a few left in pieces.
  • Scoop out the sweet potato from the skin and put in the bowl with all the remaining ingredients, except the buns.
  • Use your hands to combine everything very well.
  • Form patties and place on a lined baking sheet.
  • Bake at 400° for 30 minutes.
  • Serve on buns with toppings of your choice.

Notes

Prep-Ahead Note: The sweet potato can be cooked ahead of time. I use the microwave for this. The rice can also be cooked ahead of time. If you want to form the burgers ahead of time and wait to cook them, that works too.
