White Bean and Quinoa Patties

Ingredients

  • cup dry quinoa
  • 1⅓ cups water or vegetable broth
  • 2 cups finely chopped greens
  • 15 oz can cannellini beans
  • 4 cloves garlic crushed
  • 2 tsp. ground sage
  • 1 tsp. rosemary
  • ½ tsp. fennel seed
  • 2 tsp. tamari
  • salt & pepper to taste
  • 1 granny smith apple peeled and grated
  • 3 green onions diced

Instructions

  • Rinse the quinoa in a colander.
  • Put it in a saucepan with the water or broth and bring to a boil.
  • Turn the heat down to simmer, cover and cook about 15 minutes.
  • Meanwhile, in a large skillet cook the greens, beans, garlic, sage, rosemary, fennel, and tamari over medium heat until the greens are wilted.
  • Add a bit of water to the pan if it starts to get too dry.
  • Stir the mixture, smashing the beans until most of them are totally mashed.
  • Stir in the cooked quinoa, apple and green onions until well combined.
  • Use a ¼ cup measure to scoop and form 12 patties.
  • Place the patties on a lined baking sheet and bake at 350° for 20-30 minutes.

Notes

Note: To grate the apple, use a cheese grater. It goes fast.
