White Bean and Quinoa Patties

Ingredients

dry quinoa

cups
water or vegetable broth

finely chopped greens

can cannellini beans

cloves
garlic
crushed

ground sage

rosemary

fennel seed

tamari
salt & pepper
to taste

granny smith apple
peeled and grated

green onions
diced
Instructions
Rinse the quinoa in a colander.
Put it in a saucepan with the water or broth and bring to a boil.
Turn the heat down to simmer, cover and cook about 15 minutes.
Meanwhile, in a large skillet cook the greens, beans, garlic, sage, rosemary, fennel, and tamari over medium heat until the greens are wilted.
Add a bit of water to the pan if it starts to get too dry.
Stir the mixture, smashing the beans until most of them are totally mashed.
Stir in the cooked quinoa, apple and green onions until well combined.
Use a ¼ cup measure to scoop and form 6 patties.
Place the patties on a lined baking sheet and bake at 350° for 20-30 minutes.
Notes
Note: To grate the apple, use a cheese grater. It goes fast.
