Creamy Quinoa with Mushrooms and Sun-dried Tomatoes

Ingredients

  • 1 cup quinoa rinsed and drained
  • 2 cups vegetable broth
  • ¼ cup nutritional yeast
  • 8 oz. sliced mushrooms
  • ½ 8.5 oz. jar sun-dried tomatoes
  • 2 cups chopped kale or other greens
  • ½ tsp. turmeric
  • 1 tsp. hot sauce
  • 1 Tbs. flax seed meal

Instructions

  • Combine all the ingredients in a saucepan.
  • Cover loosely and bring to a boil over high heat.
  • Reduce the heat once it boils and simmer for 15 minutes.
  • This will thicken as it cools.
