Creamy Quinoa with Mushrooms and Sun-dried Tomatoes

- 1 cup quinoa rinsed and drained
- 2 cups vegetable broth
- ¼ cup nutritional yeast
- 8 oz. sliced mushrooms
- ½ 8.5 oz. jar sun-dried tomatoes
- 2 cups chopped kale or other greens
- ½ tsp. turmeric
- 1 tsp. hot sauce
- 1 Tbs. flax seed meal
Combine all the ingredients in a saucepan.
Cover loosely and bring to a boil over high heat.
Reduce the heat once it boils and simmer for 15 minutes.
This will thicken as it cools.
