Stir together the spices in a small bowl.
Add water to thin the mixture so it’s pourable.
In a large skillet, heat the olive oil over medium heat.
Add the onion and cook until it begins to soften.
Add the greens, cover the skillet and cook until the greens begin to wilt down.
Add the tomatoes to the skillet.
Push the vegetables to one side of the skillet and add the tofu crumbles to the empty side.
Let them cook a few minutes, stirring occasionally until the tofu is hot.
Pour the spice mixture over the tofu and stir to distribute the spices.
Serve the tofu and greens together on plates.
