Tofu Scramble

Ingredients

  • 1 tsp. onion powder
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 2 tsp. cumin
  • 3-4 Tbs. water to thin
  • 2 Tbs. olive oil
  • 1 onion diced
  • 6-8 cups greens kale, spinach, chard, etc.
  • 2 cups grape tomatoes halved
  • 28 oz. extra firm tofu crumbled

Instructions

  • Stir together the spices in a small bowl.
  • Add water to thin the mixture so it’s pourable.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and cook until it begins to soften.
  • Add the greens, cover the skillet and cook until the greens begin to wilt down.
  • Add the tomatoes to the skillet.
  • Push the vegetables to one side of the skillet and add the tofu crumbles to the empty side.
  • Let them cook a few minutes, stirring occasionally until the tofu is hot.
  • Pour the spice mixture over the tofu and stir to distribute the spices.
  • Serve the tofu and greens together on plates.
