Mediterranean Bulgur Bowls

- 2 cups bulgur
- 1 tsp. cumin
- 4 cups water
- 2 15 oz. can chickpeas drained and rinsed
- ¼ cup lemon juice
- 12-16 cups chopped greens spinach, kale, chard etc.
- 4 cups grape tomatoes halved
- 1 red onion diced or thinly sliced
- 1 cup hummus
Combine the bulgur, cumin and water in a saucepan.
Bring to a boil, reduce heat and simmer 10-12 minutes.
Stir the chickpeas and lemon juice into the bulgur and heat it over low heat, just to warm the chickpeas.
Remove the pan from heat and stir in the greens.
Let it rest for 5 minutes to wilt the greens.
Serve in bowls, topped with tomatoes, onion and hummus.
