Mediterranean Bulgur Bowls

Ingredients

  • 1 cup bulgur
  • ½ tsp. cumin
  • 2 cups water
  • 15 oz. can chickpeas drained and rinsed
  • 2 Tbs. lemon juice
  • 6-8 cups chopped greens spinach, kale, chard etc.
  • 2 cups grape tomatoes halved
  • 1 small red onion diced or thinly sliced
  • ½ cup hummus

Instructions

  • Combine the bulgur, cumin and water in a saucepan.
  • Bring to a boil, reduce heat and simmer 10-12 minutes.
  • Stir the chickpeas and lemon juice into the bulgur and heat it over low heat, just to warm the chickpeas.
  • Remove the pan from heat and stir in the greens.
  • Let it rest for 5 minutes to wilt the greens.
  • Serve in bowls, topped with tomatoes, onion and hummus.
