Roasted Sweet Potato and Broccoli Soba Noodle Bowl

Ingredients

  • 1 sweet potato chopped in small, bite-sized pieces
  • 16 oz. broccoli frozen
  • 8 oz. soba noodles
  • 1 small red onion chopped
  • 1 red bell pepper chopped
  • 2 carrots diced
  • 1 cup frozen mango chunks thawed and diced, or 1 fresh mango

For the dressing:

  • 2 tsp. fresh ginger grated, or ground ginger
  • 6 Tbs. tamari
  • ¼ cup maple syrup
  • 3 Tbs. rice vinegar
  • 2 Tbs. sesame seeds toasted

Instructions

  • Place the sweet potato on a baking sheet and roast in the oven at 400° for 15-20 minutes.
  • Cook the broccoli until tender, but still somewhat firm.
  • Rinse under cold water to stop the cooking process.
  • Cook the soba noodles according to the package directions.
  • Cool the finished noodles under cold water.
  • Add the cooked sweet potato, cooked broccoli, cooked noodles, red onion, bell pepper, carrots and mango to a large bowl.

For the dressing:

  • Stir ingredients together.
  • Toss this dressing with the ingredients in the bowl.
