Ingredients

  • 15 oz. can cannellini beans drained and rinsed
  • 1 small onion sliced
  • 1 bell pepper sliced
  • 1 small-medium zucchini cut in ½” thick half-moons
  • 1 carrot peeled and chopped
  • 4 oz. container baby bella mushrooms sliced
  • ½ 28 oz. can crushed tomatoes
  • 2 cloves garlic crushed
  • 1 tsp. oregano
  • ½ tsp. basil
  • 1 bay leaf
  • salt & pepper to taste
  • balsamic vinegar for serving
  • pasta rice, polenta, riced cauliflower, etc. for serving

Instructions

  • Place all the ingredients, except balsamic vinegar in a dutch oven.
  • Bake at 350° for 1 hour.
  • Serve over pasta, rice, polenta, cauliflower, etc.
  • Add a dash or two of balsamic vinegar to each serving, if desired.
