- 15 oz. can cannellini beans drained and rinsed
- 1 small onion sliced
- 1 bell pepper sliced
- 1 small-medium zucchini cut in ½” thick half-moons
- 1 carrot peeled and chopped
- 4 oz. container baby bella mushrooms sliced
- ½ 28 oz. can crushed tomatoes
- 2 cloves garlic crushed
- 1 tsp. oregano
- ½ tsp. basil
- 1 bay leaf
- salt & pepper to taste
- balsamic vinegar for serving
- pasta rice, polenta, riced cauliflower, etc. for serving
Place all the ingredients, except balsamic vinegar in a dutch oven.
Bake at 350° for 1 hour.
Serve over pasta, rice, polenta, cauliflower, etc.
Add a dash or two of balsamic vinegar to each serving, if desired.
