- 15 oz cans cannellini beans drained and rinsed
- 1 onion sliced
- 2 bell peppers sliced
- 1 medium - large zucchini cut in ½” thick half-moons
- 2 carrots peeled and chopped
- 8 oz. baby bella mushrooms sliced
- 28 oz. can crushed tomatoes
- 3 cloves garlic crushed
- 2 tsp. oregano
- 1 tsp. basil
- 2 bay leaves
- salt & pepper to taste
- balsamic vinegar for serving
- pasta rice, polenta, riced cauliflower, etc. for serving
Place all the ingredients, except balsamic vinegar in the instant pot.
Set cook time for 9 minutes. Do a quick release when the cook time is up.
Serve over pasta, rice, polenta, cauliflower, etc.
Add a dash or two of balsamic vinegar to each serving, if desired.
