Caribbean Jerk Sweet Potatoes with Coconut Rice and Mango Salsa

Ingredients

  • 3-4 sweet potatoes cut in wedges
  • 2 Tbs. jerk seasoning or use homemade
  • ½ small red onion diced
  • 2 cloves garlic crushed
  • cups brown rice
  • 14 oz. can coconut milk
  • 15 oz. can kidney beans drained and rinsed
  • 2 cups frozen mango chunks thawed and diced (or 1-2 fresh mangoes)
  • 3 Tbs. lime juice about one lime
  • 2 Tbs. chopped cilantro

For the Jerk Seasoning (Yield ¼ cup):

  • ½ Tbs. garlic powder
  • 1 tsp. cayenne
  • 1 tsp. onion powder
  • 1 tsp. thyme
  • 1 tsp. dried parsley
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. paprika
  • ½ tsp. ground allspice
  • ¼ tsp. black pepper
  • ¼ tsp. ground nutmeg
  • tsp. cinnamon

Instructions

For the potatoes & rice:

  • Toss the sweet potatoes and jerk seasoning together to coat the potatoes.
  • Place potatoes on a baking sheet and roast at 425° for 20-25 minutes or until tender.
  • Set aside 1 Tbs. diced onion for the salsa.
  • In a saucepan or in the Instant Pot, cook the remaining onion and garlic until the onion is soft.
  • Add a bit of water to the pot if it begins to stick.
  • Add water to the coconut milk if needed to make 2 cups of liquid.
  • Pour the liquid into the pot with the onion, then stir in the rice.

Stovetop Rice Version:

  • If cooking rice on the stove, bring coconut milk plus enough water to equal amount of liquid the package calls for to a boil, then turn down to simmer, cover and cook 45 minutes until the liquid is absorbed.

Instant Pot Rice Version:

  • Place brown rice and coconut milk in the instant pot, close the lid and seal.
  • Cook the rice for 17 minutes on high pressure, followed by a quick pressure release.

For the salsa and bowls:

  • While the rice and potatoes cook, make the salsa by stirring together the mango, lime juice, reserved onion and cilantro.
  • Season with salt and pepper, if desired.
  • When the rice is cooked, stir the kidney beans into it.
  • Place some sweet potatoes in each bowl, top with rice and beans and garnish with mango salsa.

For the Jerk Seasoning:

  • Stir together all the spices. Store in an air-tight container.
