For the shawarma:
- 3 Tbs. lemon juice
- 3 Tbs. olive oil
- ½ tsp. salt
- 1 tsp. curry powder
- 1 dash cayenne pepper
- 2 cloves garlic crushed
- 1½ lbs. chicken thighs boneless strips
- ¼ cup chicken broth
- 3-4 pita bread rounds
- 1 small head lettuce for serving, optional
For the cucumber sauce:
- 4 oz. plain or Greek yogurt or sour cream
- ½ small cucumber chopped
For the shawarma:
Place meat in the Instant Pot.
Stir together all other ingredients except pita, lettuce, and cucumber sauce and pour over meat.
Set cook time to 15 minutes.
Do a quick pressure release.
Serve chicken topped with cucumber sauce in pita bread rounds or wrapped in lettuce leaves.
