Instant Pot Chicken Shawarma

Ingredients

For the shawarma:

  • 3 Tbs. lemon juice
  • 3 Tbs. olive oil
  • ½ tsp. salt
  • 1 tsp. curry powder
  • 1 dash cayenne pepper
  • 2 cloves garlic crushed
  • lbs. chicken thighs boneless strips
  • ¼ cup chicken broth
  • 3-4 pita bread rounds
  • 1 small head lettuce for serving, optional

For the cucumber sauce:

  • 4 oz. plain or Greek yogurt or sour cream
  • ½ small cucumber chopped

Instructions

For cucumber sauce:

  • Stir together cucumber and yogurt.

For the shawarma:

  • Place meat in the Instant Pot.
  • Stir together all other ingredients except pita, lettuce, and cucumber sauce and pour over meat.
  • Set cook time to 15 minutes.
  • Do a quick pressure release.
  • Serve chicken topped with cucumber sauce in pita bread rounds or wrapped in lettuce leaves.
