Maple Dijon Apple Slaw topped with Tofu

- 14 oz. block firm or extra-firm tofu
- 2 Tbs. tamari - divided
- 2 Tbs. maple syrup
- 1 Tbs. dijon mustard
- 1 clove garlic crushed
- 1 granny smith apple peeled and chopped
- 12 oz. package broccoli slaw
Drain the tofu and press it between paper towels on a plate, placing something heavy on top to squeeze out the extra liquid.
Let drain for 5-10 minutes.
Cube the tofu and toss with 1 Tbs. of the tamari.
Place on a baking sheet and bake at 400° for 30 minutes.
Stir the remaining tamari together with the maple syrup, mustard, and garlic.
Pour into a large skillet and bring the sauce to a boil over medium-high heat.
Add the apple and slaw to the skillet and stir to combine, then remove from heat.
Serve the slaw topped with tofu.
