Maple Dijon Apple Slaw topped with Tofu

Ingredients

  • 14 oz. block firm or extra-firm tofu
  • 2 Tbs. tamari - divided
  • 2 Tbs. maple syrup
  • 1 Tbs. dijon mustard
  • 1 clove garlic crushed
  • 1 granny smith apple peeled and chopped
  • 12 oz. package broccoli slaw

Instructions

  • Drain the tofu and press it between paper towels on a plate, placing something heavy on top to squeeze out the extra liquid.
  • Let drain for 5-10 minutes.
  • Cube the tofu and toss with 1 Tbs. of the tamari.
  • Place on a baking sheet and bake at 400° for 30 minutes.
  • Stir the remaining tamari together with the maple syrup, mustard, and garlic.
  • Pour into a large skillet and bring the sauce to a boil over medium-high heat.
  • Add the apple and slaw to the skillet and stir to combine, then remove from heat.
  • Serve the slaw topped with tofu.
