Green Goddess Bowls

Ingredients

  • 3 cups water
  • cups quinoa
  • 1 crown broccoli chopped
  • 2 avocados mashed
  • 2 cloves garlic crushed
  • ¼ cup lime juice about 2 limes
  • 1 Tbs. fresh dill or 1 tsp. dried dill, optional
  • salt & pepper to taste
  • 2 15 oz. cans chickpeas drained and rinsed
  • 1 cucumber peeled, seeded and chopped
  • 1 bunch green onions chopped

Instructions

  • In a saucepan, bring the water to a boil.
  • Add the quinoa and broccoli.
  • Turn the heat down to low and simmer for 15 minutes, until the quinoa is tender and the water is absorbed.
  • While the quinoa and broccoli cook, stir together the mashed avocados, garlic, lime juice, dill, salt and pepper to make a sauce.
  • When the quinoa and broccoli are finished cooking, remove from heat and stir in the chickpeas.
  • Serve the quinoa, broccoli and chickpeas in bowls, topped with cucumber, green onions and drizzled with the avocado sauce.
