Green Goddess Bowls

Ingredients

  • cups water
  • ¾ cup quinoa
  • ½ crown broccoli chopped
  • 1 avocado mashed
  • 2 cloves garlic crushed
  • 2 Tbs. lime juice about 1 lime
  • tsp. fresh dill or ½ tsp. dried dill, optional
  • salt & pepper to taste
  • 15 oz. can chickpeas drained and rinsed
  • 1 small cucumber peeled, seeded and chopped
  • ½ bunch green onions chopped

Instructions

  • In a saucepan, bring the water to a boil.
  • Add the quinoa and broccoli.
  • Turn the heat down to low and simmer for 15 minutes, until the quinoa is tender and the water is absorbed.
  • While the quinoa and broccoli cook, stir together the mashed avocado, garlic, lime juice, dill, salt and pepper to make a sauce.
  • When the quinoa and broccoli are finished cooking, remove from heat and stir in the chickpeas.
  • Serve the quinoa, broccoli and chickpeas in bowls, topped with cucumber, green onions and drizzled with the avocado sauce.
