- 1½ cups water
- ¾ cup quinoa
- ½ crown broccoli chopped
- 1 avocado mashed
- 2 cloves garlic crushed
- 2 Tbs. lime juice about 1 lime
- 1½ tsp. fresh dill or ½ tsp. dried dill, optional
- salt & pepper to taste
- 15 oz. can chickpeas drained and rinsed
- 1 small cucumber peeled, seeded and chopped
- ½ bunch green onions chopped
In a saucepan, bring the water to a boil.
Add the quinoa and broccoli.
Turn the heat down to low and simmer for 15 minutes, until the quinoa is tender and the water is absorbed.
While the quinoa and broccoli cook, stir together the mashed avocado, garlic, lime juice, dill, salt and pepper to make a sauce.
When the quinoa and broccoli are finished cooking, remove from heat and stir in the chickpeas.
Serve the quinoa, broccoli and chickpeas in bowls, topped with cucumber, green onions and drizzled with the avocado sauce.
