Ingredients

  • 8 sweet potatoes
  • 2 bunches broccoli chopped
  • 4 lemons juiced (about ½ cup)
  • ¼ cup miso paste
  • ¼ cup white wine vinegar
  • 2 Tbs. maple syrup
  • 2 Tbs. sesame seeds
  • ¼ cup fresh parsley chopped
  • salt and pepper to taste
  • 2 15 oz. cans cannellini beans, drained and rinsed

Instructions

  • Bake the sweet potatoes using the method you prefer - in the oven at 400° for about 1 hour, or in the microwave for about 15 minutes.
  • Cook the broccoli on the stove top in a saucepan with about a cup of water for about 10-15 minutes, until it’s tender crisp.
  • Drain the water when it’s finished cooking.
  • Stir together the lemon juice, miso paste, vinegar, maple syrup, sesame seeds, parsley, salt and pepper.
  • Serve the sweet potatoes by splitting them and topping with broccoli and cannellini beans.
  • Drizzle with the lemon dressing.

Notes

Note: Miso is found in the refrigerated section, but you might not find it at every grocery. You can skip it, but it does add nice flavor to many recipes and will keep for a year or more in your fridge.
