Summer Tomato Chickpea Salad

- 2 15 oz. cans chickpeas drained and rinsed
- 2 tsp. smoked paprika
- 2 Tbs. cilantro or parsley chopped
- ¼ cup red onion diced
- 2 Tbs. white wine vinegar
- 1 tsp. maple syrup
- salt & pepper to taste
- 2 cups grape or cherry tomatoes halved
- 2 avocados sliced
Stir together the drained chickpeas and smoked paprika in a bowl.
In another bowl, stir together the cilantro or parsley, onion, vinegar, maple syrup, salt and pepper.
Add the tomatoes and toss.
