Summer Tomato Chickpea Salad

Ingredients

  • 2 15 oz. cans chickpeas drained and rinsed
  • 2 tsp. smoked paprika
  • 2 Tbs. cilantro or parsley chopped
  • ¼ cup red onion diced
  • 2 Tbs. white wine vinegar
  • 1 tsp. maple syrup
  • salt & pepper to taste
  • 2 cups grape or cherry tomatoes halved
  • 2 avocados sliced

Instructions

  • Stir together the drained chickpeas and smoked paprika in a bowl.
  • In another bowl, stir together the cilantro or parsley, onion, vinegar, maple syrup, salt and pepper.
  • Add the tomatoes and toss.
