Crunchy Chickpea and Apple Sandwiches

Ingredients

For the sauce:

  • ¼ cup nut butter almond, cashew, etc.
  • 2 Tbs. rice vinegar
  • 2 Tbs. tamari
  • 2 tsp. ground ginger
  • 2 tsp. garlic powder
  • 2 tsp. maple syrup

For the sandwiches:

  • 2 15 oz. cans chickpeas drained and rinsed
  • 1 large apple peeled and diced
  • 2 cups slaw mix
  • ¼-⅓ cup red onion diced
  • 12-16 slices bread for toast or 6-8 tortillas
  • 12-16 large leafy greens

Instructions

For the sauce:

  • Stir sauce ingredients together in a small bowl.

For the sandwiches:

  • In a larger bowl, lightly mash the chickpeas.
  • Add the apple, slaw mix, red onion and toss everything to coat in the sauce.
  • Serve as sandwiches on toast, in tortillas as wraps or over greens.
