Crunchy Chickpea and Apple Sandwiches

For the sauce:
- ¼ cup nut butter almond, cashew, etc.
- 2 Tbs. rice vinegar
- 2 Tbs. tamari
- 2 tsp. ground ginger
- 2 tsp. garlic powder
- 2 tsp. maple syrup
For the sandwiches:
- 2 15 oz. cans chickpeas drained and rinsed
- 1 large apple peeled and diced
- 2 cups slaw mix
- ¼-⅓ cup red onion diced
- 12-16 slices bread for toast or 6-8 tortillas
- 12-16 large leafy greens
For the sandwiches:
In a larger bowl, lightly mash the chickpeas.
Add the apple, slaw mix, red onion and toss everything to coat in the sauce.
Serve as sandwiches on toast, in tortillas as wraps or over greens.
