Crunchy Chickpea and Apple Sandwiches

For the sauce:
- 2 Tbs. nut butter almond, cashew, etc.
- 1 Tbs. rice vinegar
- 1 Tbs. tamari
- 1 tsp. ground ginger
- 1 tsp. garlic powder
- 1 tsp. maple syrup
For the sandwiches:
- 15 oz. can chickpeas drained and rinsed
- 1 small apple peeled and diced
- 1 cup slaw mix
- 2-3 Tbs. red onion diced
- 6-8 slices bread for toast or 3-4 tortillas, 6-8 large leafy grees
For the sandwiches
In a larger bowl, lightly mash the chickpeas.
Add the apple, slaw mix, red onion and toss everything to coat in the sauce.
Serve as sandwiches on toast, in tortillas as wraps or over greens.
