Crunchy Chickpea and Apple Sandwiches

Ingredients

For the sauce:

  • 2 Tbs. nut butter almond, cashew, etc.
  • 1 Tbs. rice vinegar
  • 1 Tbs. tamari
  • 1 tsp. ground ginger
  • 1 tsp. garlic powder
  • 1 tsp. maple syrup

For the sandwiches:

  • 15 oz. can chickpeas drained and rinsed
  • 1 small apple peeled and diced
  • 1 cup slaw mix
  • 2-3 Tbs. red onion diced
  • 6-8 slices bread for toast or 3-4 tortillas, 6-8 large leafy grees

Instructions

For the sauce:

  • Stir together the first six ingredients in a small bowl.

For the sandwiches

  • In a larger bowl, lightly mash the chickpeas.
  • Add the apple, slaw mix, red onion and toss everything to coat in the sauce.
  • Serve as sandwiches on toast, in tortillas as wraps or over greens.
