Ingredients

  • 15 oz. can cannellini beans
  • ¾ cup cooked quinoa
  • 1 cucumber
  • 1 shallot
  • ½ tsp. dried mint
  • 12 oz. jar roasted red peppers
  • 1 large box mixed greens
  • vinaigrette dressing

For homemade vinaigrette dressing:

  • ½ cup white wine vinegar
  • 2 Tbs. lemon juice
  • 2 Tbs. maple syrup
  • 2 cloves garlic crushed
  • 4 tsp. dijon mustard
  • 2 tsp. dried oregano
  • 2 tsp. dried basil

Instructions

  • Toss all salad ingredients together in a bowl and dress to taste with vinaigrette dressing.

For homemade vinaigrette dressing:

  • Whisk together the vinegar, maple syrup, garlic, mustard, oregano, and basil.
