Roasted Veggie and Lemon Pasta

- 16 oz. whole wheat bowtie pasta
- 2 zucchini chopped
- 2 bell peppers chopped
- 1 onion chopped
- 1 clove garlic crushed
- 1 cup cherry or grape tomatoes halved
- 6 oz. can pitted black olives
- 1-3 Tbs. lemon juice
- salt & pepper to taste
Cook the pasta according to the package directions.
Place the zucchini, peppers, onion, garlic and tomatoes in a bowl and season with salt and pepper.
Toss to combine everything and pour onto a baking sheet.
Place in the oven at 400° for 15 minutes.
When the pasta is cooked, drain it and put it back in the pan.
Add the roasted vegetables, olives, lemon juice and season with salt and pepper.
