Roasted Veggie and Lemon Pasta

Ingredients

  • 8 oz. whole wheat bowtie pasta
  • 1 zucchini chopped
  • 1 bell pepper chopped
  • 1 small onion chopped
  • 1 clove garlic crushed
  • ½ cup cherry or grape tomatoes halved
  • 3 oz. can pitted black olives
  • ½-1½ Tbs. lemon juice
  • salt & pepper to taste

Instructions

  • Cook the pasta according to the package directions.
  • Place the zucchini, peppers, onion, garlic and tomatoes in a bowl and season with salt and pepper.
  • Toss to combine everything and pour onto a baking sheet.
  • Place in the oven at 400° for 15 minutes.
  • When the pasta is cooked, drain it and put it back in the pan.
  • Add the roasted vegetables, olives, lemon juice and season with salt and pepper.
