15-Minute BBQ Chickpea Pizza

Ingredients

  • 4 whole wheat pita naan or pizza crust
  • 2 15 oz. cans chickpeas drained and rinsed
  • ½ cup BBQ sauce
  • 8 oz. can pineapple tidbits drained
  • ½ cup red onion thinly sliced
  • 4 cups arugula

Instructions

  • Stir the bbq sauce into the chickpeas and then arrange the chickpeas on the pita bread, naan or pizza crust.
  • Top each pizza with pineapple and onion.
  • Bake at 400° for 10-12 minutes or until hot.
  • Remove from oven and pile a cup of arugula on top of the pizza.
  • Eat with a fork and knife.
