Quinoa and Chard Skillet

Ingredients

  • 2 cups quinoa
  • 4 cups water
  • 2 onions chopped
  • 8 cloves garlic crushed
  • 2 bunches swiss chard chopped
  • 2 Tbs. capers optional
  • ½-1 tsp. crushed red pepper flakes
  • salt & pepper
  • ¼ cup fresh herbs chopped - parsley or basil
  • ¼ cup lemon juice
  • 2 15 oz. cans chickpeas drained and rinsed

Instructions

  • Cook the quinoa in vegetable broth by boiling the water in a saucepan and adding the quinoa.
  • Reduce the heat to simmer and cover loosely for 15 minutes, until the water has been absorbed.
  • In a large skillet cook the onion and garlic over medium heat, adding a bit of water if it begins to stick.
  • When the onion is soft, add the chard to the skillet, along with a bit more water to keep it from sticking.
  • Cover and let the chard begin to wilt
  • Cook for about 15 minutes, until the chard is tender and wilted.
  • Stir in the capers, if using and the remaining ingredients.
  • Stir the cooked quinoa and chickpeas into the skillet.
