Quinoa and Chard Skillet

- 1 cup quinoa
- 2 cups water
- 1 onion chopped
- 4 cloves garlic crushed
- 1 bunch swiss chard chopped
- 1 Tbs. capers optional
- ¼-½ tsp. crushed red pepper flakes
- salt & pepper
- 2 Tbs. fresh herbs chopped - parsley or basil
- 2 Tbs. lemon juice
- 15 oz. can chickpeas drained and rinsed
Cook the quinoa in vegetable broth by boiling the water in a saucepan and adding the quinoa.
Reduce the heat to simmer and cover loosely for 15 minutes, until the water has been absorbed.
In a large skillet cook the onion and garlic over medium heat, adding a bit of water if it begins to stick.
When the onion is soft, add the chard to the skillet, along with a bit more water to keep it from sticking.
Cover and let the chard begin to wilt.
Cook for about 15 minutes, until the chard is tender and wilted.
Stir in the capers, if using and the remaining ingredients.
Stir the cooked quinoa and chickpeas into the skillet.
