Fettuccine with Cauliflower Alfredo

Ingredients

  • 32 oz. frozen cauliflower florets
  • 1 white onion diced
  • 4 oz. pine nuts
  • 6 cloves garlic peeled
  • ¼ cup nutritional yeast
  • 2 Tbs. lemon juice
  • salt & pepper to taste
  • 1 lb. fettuccine cooked

Instructions

  • Put the cauliflower, onion, pine nuts and garlic in a pan and cover with water.
  • Bring to a boil, then reduce heat and cook for 10-12 minutes, until the cauliflower is tender.
  • Drain the cauliflower and put in the blender or food processor with the nutritional yeast, lemon juice, salt and pepper.
  • Blend until smooth.
  • Add this sauce to the cooked fettuccine.
  • If needed, put it in a pot and cook over medium heat to warm it up.
