Fettuccine with Cauliflower Alfredo

- 32 oz. frozen cauliflower florets
- 1 white onion diced
- 4 oz. pine nuts
- 6 cloves garlic peeled
- ¼ cup nutritional yeast
- 2 Tbs. lemon juice
- salt & pepper to taste
- 1 lb. fettuccine cooked
Put the cauliflower, onion, pine nuts and garlic in a pan and cover with water.
Bring to a boil, then reduce heat and cook for 10-12 minutes, until the cauliflower is tender.
Drain the cauliflower and put in the blender or food processor with the nutritional yeast, lemon juice, salt and pepper.
Blend until smooth.
Add this sauce to the cooked fettuccine.
If needed, put it in a pot and cook over medium heat to warm it up.
