Sweet Potato, Apple and Kale Soup

- 1 onion chopped
- 2 large sweet potatoes peeled and diced
- 2 15 oz. cans coconut milk
- 3 cups chopped kale
- 2 apples peeled and chopped
- 2 cups vegetable broth
- ½ tsp. curry powder
- 1 tsp. thyme
- salt & pepper to taste
- pumpkin seeds to top optional
Cook the onion in a large pot on the stove.
Add a bit of water if it begins to stick.
Stir in the sweet potatoes and coconut milk.
Cook 5 minutes.
Add the kale, apples, vegetable broth and seasonings.
Cook 20-30 minutes over medium heat until the potatoes are tender.
Serve topped with pumpkin seeds, if desired.
