Sweet Potato, Apple and Kale Soup

Ingredients

  • 1 small onion chopped
  • 1 large sweet potatoes peeled and diced
  • 15 oz. cans coconut milk
  • cups chopped kale
  • 1 apples peeled and chopped
  • 1 cups vegetable broth
  • ¼ tsp. curry powder
  • ½ tsp. thyme
  • salt & pepper to taste
  • pumpkin seeds to top optional

Instructions

  • Cook the onion in a large pot on the stove.
  • Add a bit of water if it begins to stick.
  • Stir in the sweet potatoes and coconut milk.
  • Cook 5 minutes.
  • Add the kale, apples, vegetable broth and seasonings.
  • Cook 20-30 minutes over medium heat until the potatoes are tender.
  • Serve topped with pumpkin seeds, if desired.
